REFRESHING SUMMER RAW BEET SALAD
2 beets peeled & julienned (raw)
1 small to medium Jicama
(peeled and julienned)
ΒΌ cup onion chopped
(based on taste: Vidalia, red ,spring)
1-2 stalks Celery chopped
1 Tbsp fresh ginger sliced or chopped
1 small chopped tart apple
(gala apples, granny smith)
1/4 cup raw sunflower seeds
Place in Mixing bowl. Add Dressing and Chill 30 minutes or longer.
Dressing:
Juice of 1 lime or lemon
( I prefer lime)
1 Tbsp Honey, Mix well to blend honey. (or to taste)
